Looking for ways to use the vegan mozzarella I had, I decided to make a green pasta sauce! You will love this healthy, easy, cheap and under 30 minutes recipe, it is the right answer to how to make broccoli tasty and how to make spinach tasty! And of course… how to include more greens into your diet!

Green sauce for pasta

Easy healthy and delicious green sauce for pasta!

Equipment

Ingredients

  • 1 Medium sized broccoli
  • 150 g Fresh spinach (or 4 defrosted spinach cubes)
  • 1 Medium sized onion
  • 1 tbsp Vegans tock powder (buillon)
  • 3 tbsp Tahini
  • 1 cup Soy milk (or any other plant-based milk)
  • 2 Medium sized garlic cloves
  • 20 g Coriander
  • 1 tbsp Olive oil

Instructions

  • Make sure you have all the ingredients
  • Boil the broccoli and the spinach for about 8 minutes in different pots
  • Preheat a pan at a medium fire with the olive oil, or with some boiling water
  • Chop the garlic and add it to the pan
  • Chop the onion and add it to the pan
  • Chop the coriander and add it to the pan. At this point the Onion and the garlic should be midway to be caramelized, so add the coriander
  • Move with a spatula the coriander, garlic and the onion until the onion and garlic are caramelized
  • Strain the spinach and the broccoli with cold water to prepare them for the blender
  • Chop the broccoli
  • Add all the ingredients, but the plant-based milk to the blender, and blend first at low speed, and increase to high speed, and leave it there for 1-2 minutes
  • Scrape the blender with a rubber spatula
  • Add the plant based milk and blend for another minute or 2 until it is smooth
  • Enjoy!
