Protein pizza dough (no yeast)

I have been using vital wheat gluten with fava bean flour to make pizza dough. This recipe is full of protein, it does not require yeast or roller to give form (you will give it form using your hands) and it has a great taste and texture! Follow me to make this protein pizza dough!

First, get your ingredients:

Integrate well in a bowl, and then start to knead it. This dough should be a little more wet than normal dough because we’ll give it form with our hands.

Don’t knead it too much! it can get stiff, that’s why I am including some small videos so you can see the texture. It is also impossible to tell you how long you have to knead it because I don’t know how strong you are 😛 but I do it for about 5 minutes.

Preheat the oven at 350 degrees Fahrenheit or 180 Celcius. While it is preheating, cut non-stick baking paper to the size of a 15 ” baking tray (that’s the size I use). Then with your hands, start expanding the dough on the baking tray. You can see a bit of how I do it here:

Put it in the oven for about 10 minutes. Do check it periodially! it should be lightly brown on some parts of the dough. And once ready it looks like this:

Ingredients

  • 2/3 cup Vital wheat gluten flour
  • 1/3 cup White bean fava flour
  • 1/5 cup Olive oil
  • 1 teaspoon Salt Optional
  • 1 teaspoon Black pepper Optional
  • 1 teaspoon Dried rosemary Optional
  • 3/4 cup Water

Instructions

  • Get all your ingredients
  • Mix them in a bowl until they are well integrated
  • Knead the dough with your hands for about 5 minutes. The consistency should look like in the picture
  • Preheat the oven at 350 degrees farenheit or 180 celcius
  • Cut baking paper (non-stick!) and expand the dough with your hands. The ideal size is around 15 inches which is the size of the tray I normally use
  • Put the pizza dough in the oven and let it cook for about 10 minutes. Check it at 8 minutes and make sure it is cooking OK. You know it is ready when it is light brown!
  • Enjoy!

Notes

  • This is a “harder” and a bit crunchier dough than the normal pizza dough
  • It has around 35g of protein per portion due to the use of vital wheat gluten. Depends on the exact brand you use of both flours
  • The taste is different! do not expect it to taste like normal pizza dough. If you like seitan, you’ll probably enjoy this pizza dough
  • Calories are approximate, they can be more or less, depending on the specific flour you are using. I suggest checking labels and using weights instead of cups if you are counting calories
